Eating Healthy doesn’t have to be Boring

Morning! This time of year always calls for something cold creamy and satisfying. In the past my go to would be ice cream but since I’m no longer consuming dairy I decided to get creative in making my own frozen desserts.
Recently, I’ve been trying to get my inflammation under control. Did you know inflammation is the biggest underlying factor of chronic disease? It can cause all sorts of problems from diabetes to gut issues, cognitive, autoimmune disorders and even cancer. For me, it was leaky gut, which in turn caused a lot of brain fog and learning difficulties then eventually led to malabsorption of nutrients which, among other things contributed to anemia. Now, on my path to healing I’m discovering a lot of gut healing foods. For one, collagen.
Collagen contains the amino acids glycine, proline, and hydroxyproline that are needed to repair and rebuild your gut lining. Regular consumption of collagen containing foods like bone broth, gelatin, and collagen powders can be therapeutic additions to the diet that may help mend and prevent leaky gut. Makes 2 Servings:
2 Frozen Bananas
2-4 Tbsp of non dairy milk(I used unsweetened coconut) depending on how thick you like it
2 Scoops of collagen unflavored
2 tsp of Golden Milk Powder
Toasted unsweet coconut flakes
Couple shakes of cinnamon
(Alternate Option) – Add a cup of frozen pineapple for a Pina Colada twist!
Blend 1st four ingredients in blender (a little partial to Vitamix!) until nice a smooth and creamy. Put in bowl, top with coconut few shakes of cinnamon, and enjoy!!
This is a great evening snack and here is why. Did you know bananas can help you sleep? Not only do they contain potassium and magnesium but also tryptophan. The Golden Milk has turmeric in it which is ideal for fighting inflammation. As well as Ashwandaga, that helps stabilize cortisol levels and stress. Cinnamon contains antioxidants anti inflammatory properties along ability to regulate blood sugar. Coconut gives you much needed healthy fats for so many things.
